Well, you should definitely read Ranma 1/2, it's a martial arts comedy, and the ending was a little disappointing, but you realize that the two get together in the end.
Maison Ikkoku is a very sweet romance, with a good sprinkling of comedy. Good all around, and much shorter than Ranma or IY.
Mermaid Saga is a horror, it's about the idea that eating a mermaid's flesh gains you immortality, and that the two main characters have to suffer countless "deaths" and must never stay in one place too long. I haven't finished it, because I've only found volumes 1-4 in bookstores.
Urusei Yatsura is a comedy, and I haven't seen/read very much of it, but what I have...it's great. I like it a lot.
